Bougie's Perfect Pancakes

Fluffy Canadian pancakes for all special breakfasts, not particularly healthy but very yummy!

Ingredients
  1. 3 cups Flour
  2. 2 tsp Sugar
  3. 2 tsp Baking Powder
  4. 1 tsp Baking Soda
  5. 1 tsp Salt
  6. 2 Eggs
  7. 2.5 cups buttermilk/sour milk /regular milk
  8. 3 Tbsp Fat
  9. Oil or Butter for frying
Instructions
  1. Seive and mix all the dry ingrdients together.
  2. Gradually mix in the egg, the milk, and the oil, stirring all the time so as not to have lumps.
  3. Do not beat, just stir, you should have a thick but pourable batter.
  4. Leave for 20 mins, or as long as you can at room temperature.
  5. Heat a large non stick frying pan or griddle and add just a tiny bit of fat.
  6. Laddle in the batter to form small round pancakes, at least 4 or more per pan depending on your pan size.
  7. They should bubble and rise a little, turn over when firm on top and cook both sides till golden.
  8. Make a whole stack then enjoy them all together, definitely a breakfast worth sharing.
Notes
  1. Best served warm with some fresh or stewed fruit, thick yoghurt, and maple syrup.
  2. The batter is even better if its made the night before, and saves you hassle in the morning. Enjoy!
