Bougie's Perfect Pancakes

Fluffy Canadian pancakes for all special breakfasts, not particularly healthy but very yummy!

Ingredients
- 3 cups Flour
- 2 tsp Sugar
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Salt
- 2 Eggs
- 2.5 cups buttermilk/sour milk /regular milk
- 3 Tbsp Fat
- Oil or Butter for frying
Instructions
- Seive and mix all the dry ingrdients together.
- Gradually mix in the egg, the milk, and the oil, stirring all the time so as not to have lumps.
- Do not beat, just stir, you should have a thick but pourable batter.
- Leave for 20 mins, or as long as you can at room temperature.
- Heat a large non stick frying pan or griddle and add just a tiny bit of fat.
- Laddle in the batter to form small round pancakes, at least 4 or more per pan depending on your pan size.
- They should bubble and rise a little, turn over when firm on top and cook both sides till golden.
- Make a whole stack then enjoy them all together, definitely a breakfast worth sharing.
Notes
- Best served warm with some fresh or stewed fruit, thick yoghurt, and maple syrup.
- The batter is even better if its made the night before, and saves you hassle in the morning. Enjoy!
